Black and White Chocolate Macadamia Bars


Cookie Base

1 pouch (1 lb 1.5 oz) Betty Crocker sugar cookie mix

2 tablespoons all-purpose flour

1/3 cup butter or margarine, softened

1 egg


Fudge Filling

1 bag (12 oz) semisweet chocolate chips (2 cups)

1 can (14 oz) sweetened condensed milk (not evaporated)

1 egg

2 teaspoons vanilla

1 cup chopped macadamia nuts

1/4 cup white vanilla baking chips

1 teaspoon vegetable oil



1. Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.

2. In large bowl, mix cookie mix, flour, butter and egg until well mixed. Press dough into bottom of prepared pan. Bake 16 to 18 minutes or until light golden brown. Cool 10 minutes.

3. Meanwhile, in small saucepan melt 1 cup of the chocolate chips and half of the sweetened condensed milk over medium-low heat, stirring frequently; remove from heat. Stir in remaining condensed milk, egg and vanilla. Spread over crust. Sprinkle with remaining 1 cup chocolate chips and nuts.

4. Bake 22 to 25 minutes or until set. Cool completely, about 30 minutes.

5. For white chocolate drizzle, place baking chips and oil in small resealable freezer plastic bag. Microwave on medium (50%) for 1 minute to 1 minute 15 seconds, turning bag over after 25 seconds. Squeeze bag until chips are melted and smooth. Cut small tip off one corner of bag, and drizzle over bars. Let stand until set, about 10 minutes. For bars, cut into 8 rows by 4 rows.

Cake Pops

After a recent trip to Starbucks, I was reacquainted with the beloved cake pop! Oh how I missed your tasty goodness! And with our princess tea party around the corner, now was the perfect time to make a test batch!

Supplies:
  • Cake Mix
  • Frosting
  • Lollipop sticks
  • Candy melts
  • Sprinkles
Make the cake per the box instructions. We selected strawberry since pink pops were requested.

Once the cake is cooled (I chilled mine overnight) crumble it up in a bowl. Add the frosting. I used 3/4 of the jar so they wouldn't be super creamy. Mix with your hands until throughly combined.

Roll mixture into balls and place on a cookie sheet.

Melt some of the chocolate per the directions on the package. Dip the lollipop sticks into the chocolate and insert into the cake ball. Stick in freezer for 30 minutes.

Next insert the cake ball into the melted chocolate by holding the lollipop stick and rotate until covered. Once covered, remove and tap until the excess chocolate drips off.

Immediately cover with sprinkles, sugar, coconut, m&m's or anything else you'd like to decorate with!

Frozen Summer Treat


Chocolate Peanut Butter Dipped Banana Pops

Ingredients:

  • 3 bananas
  • 1 cup chocolate-chips
  • 2 tablespoons all-natural peanut butter

Materials:

  • 9 wooden popsicle sticks
  • parchment paper
  1. Peel bananas and cut into three sections. Gently insert a popsicle stick into the center.
  2. Place on a parchment paper lined tray and place in the freezer while you melt your chocolate.
  3. Combine chocolate chips and peanut butter in a microwave-safe bowl. Microwave on medium (power 6-7) until melted. Stir with a spatula until smooth.
  4. Pour melted chocolate into a tall, narrow glass or container. Remove bananas from freezer. Dip, one by one, into the chocolate, letting it ooze up the sides of the glass and coat the banana.
  5. Place bananas on tray again and sprinkle with nuts, if desired. Freeze until solid.
  6. Allow to sit at room temperature for about five minutes. Keep up your heels & enjoy!

Breakfast of Champions

Bacon + chocolate combined with buttermilk pancakes = BLISS!
Growing up, the only way I would eat pancakes is if they were my moms chocolate chip pancakes. Gooey. Chocolatey. Goodness! Add that to my love of all things bacon & it's well... just about the perfect breakfast!
